Goat Cheese Quiche



The goal was to recreate Tom Fleming's quiche from Crossroads Diner in Dallas. I missed the mark, but was impressed with the lightness in the custard. The bacon and goat cheese brought it back down to earth. Upon reflection I thought that spinach, kale or chard might be a nice addition then it hit me to add caramelized onions next time.

Late Winter Ladie's Luncheon



























Today I catered a luncheon for my mother and some of her high school classmates. The menu:
Salad of romaine, rio grapefruit & sweet onion topped with fennel dressing and toasted pistachios
Lamb with red wine, fig & shallot reduction
Oven roasted herbed fingerling & red potatoes
Green beans
Onion pudding
Danish pastry
It was an easy task since my only stipulation was no seafood. You want your food to lend itself to people enjoying time spent with friends. I would call a 3 hour lunch a success.

Pappa Al Pomidoro

With the cold weather a hearty chili sounds good but it takes a good day to prepare and the weather will be warmer by the time the chili has rested and be ready to eat. So, today I am making a tomato basil soup recipe from Ina Garten’s “Barefoot Contessa Back to Basics” cookbook. The soup is topped with fresh Parmesan, ciabatta croutons, pancetta and roasted basil leaves. This sounds perfect and I am anxious to try it. Let me know if you would like to try it too!

Friday: Roasted Poblano Peppers stuffed with a savory blend of beef, pork, goat, corn & cojito cheese plus topped with a touch of cojito cheese and crema.
Monday: Broccoli, Ham and Garlic Spaghetti
